For the chicken:
• 2 chicken breasts, cut into uneven cubes
• Salt & pepper
• 1 tbsp olive oil
• 1 tbsp butter
For the sauce:
• 3 pitted Medjool dates (soft)
• 1 tbsp white miso paste
• Juice of ½ lemon
• Zest of 1 lemon
• 1 garlic clove
• ¼ cup hot water
• Optional: pinch of chili flakes or smoked paprika

1. Sear the chicken:
Season chicken cubes with salt and pepper. In a hot pan, sear in olive oil until golden on all sides. Add butter at the end for extra color and flavor. Set aside.
2. Make the sauce:
Blend the dates, miso, lemon juice, zest, garlic, and hot water until smooth. The texture should be pourable but slightly thick.
3. Glaze it:
Pour the sauce over the warm chicken in the pan. Let it bubble for a minute or two until sticky and glossy. Coat all the pieces.
4. Serve real:
Scoop onto a ceramic plate. Let the sauce drip. Let the edges be uneven. No garnish. No rules.
