Ingredients:

1 chicken breast, grilled and sliced

1 soft-boiled egg, halved

½ avocado, sliced

½ cup corn kernels

½ cup steamed broccoli

½ mango, sliced or rolled into a rose

A few cherry tomatoes, halved

½ cup cooked soba noodles or brown rice (optional base)

For the Soy-Ginger Dressing:

3 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp grated ginger

1 tsp honey

½ tsp garlic (minced)

1 tsp toasted sesame seeds

Instructions:

1. Arrange all the ingredients beautifully in a bowl.

2. In a small bowl, whisk together the soy sauce, vinegar, sesame oil, ginger, garlic, and honey.

3. Drizzle the dressing over the bowl just before serving.
