Rice Noodles with Egg & Veggies
Ingredients:
200g (7 oz) flat rice noodles π
2 eggs π₯
1 cup bok choy or spinach π₯¬
1 red bell pepper, sliced πΆοΈ
1 tomato, chopped π
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
1 clove garlic, minced
A pinch of black pepper
Instructions:
Cook the noodles β boil until soft, drain, and set aside.
Scramble the eggs β in a wok or pan with a little oil, cook until fluffy, then remove.
Stir-fry the veggies β add garlic, bell pepper, tomato, and bok choy. Cook for 2β3 minutes.
Add noodles & sauces β toss in the rice noodles, soy sauce, oyster sauce, and sesame oil. Stir well.
Mix everything β add the scrambled eggs back, mix, and cook for another minute.
Serve hot and enjoy the perfect balance of savory, sweet, and umami flavors! π
