Rice Noodles with Egg & Veggies

Ingredients:

200g (7 oz) flat rice noodles 🍜

2 eggs πŸ₯š

1 cup bok choy or spinach πŸ₯¬

1 red bell pepper, sliced 🌢️

1 tomato, chopped πŸ…

2 tbsp soy sauce

1 tbsp oyster sauce (optional)

1 tsp sesame oil

1 clove garlic, minced

A pinch of black pepper

Instructions:

Cook the noodles β€” boil until soft, drain, and set aside.

Scramble the eggs β€” in a wok or pan with a little oil, cook until fluffy, then remove.

Stir-fry the veggies β€” add garlic, bell pepper, tomato, and bok choy. Cook for 2–3 minutes.

Add noodles & sauces β€” toss in the rice noodles, soy sauce, oyster sauce, and sesame oil. Stir well.

Mix everything β€” add the scrambled eggs back, mix, and cook for another minute.
