Spicy Vegan Dumplings with Tofu and Chilli Oil Bliss

Ingredients (Serves 2–3):
For the filling:
• 150g firm tofu, crumbled
• 1 cup napa cabbage, finely chopped
• 2 spring onions, finely chopped
• 1 tbsp soy sauce
• 1 tsp sesame oil
• ½ tsp grated ginger
• 1 tsp cornflour
• Salt and white pepper
For the dumpling wrappers:
• 20 vegan dumpling wrappers (shop-bought or homemade)
For the chilli oil sauce:
• 2 tbsp chilli flakes
• 3 tbsp neutral oil
• 1 tbsp soy sauce
• 1 tbsp rice vinegar
• 1 tsp sugar
• 1 clove garlic, grated
Method:
1. Mix all filling ingredients and set aside to marinate.
2. Spoon a small amount into the centre of each wrapper. Wet edges, fold and seal.
3. Steam or boil dumplings for 6–7 mins until cooked through.
4. For chilli oil, heat oil until shimmering, pour over chilli flakes, then stir in soy sauce, vinegar, sugar, and garlic.
5. Drizzle over hot dumplings and garnish with microgreens or spring onions.
