A Sicilian harmony of tender lamb and sweet-sour vegetable stew โ savory, hearty, and bright.

1 tsp olive oil
250 g lamb loin fillet, trimmed
240 g baby spinach
1/2 cup eggplant, diced
1/2 cup cherry tomatoes
1 tbsp capers
1 tbsp red wine vinegar
Fresh herbs (thyme, oregano), to garnish

1๏ธโฃ Sear lamb in olive oil until cooked to your liking. Rest.
2๏ธโฃ In the same pan, cook eggplant and cherry tomatoes.
3๏ธโฃ Add capers and vinegar, simmer for 5 minutes.
