Viral TikTok Doner Kebab: Homemade Lamb Mince Recipe in Pita Bread with Cheese and Vegetables

If you haven't tried the TikTok doner kebab trend... absolutely DO IT!!! (apologies for the photos though - it's hard to snap a pretty picture of it!!!). 😆
I use 500g lamb mince and it's so flavour-packed and perfectly crisp around the edges — delish takeaway vibes at home. 🙌
We serve ours in soft souvlaki bread with lettuce, tomato, cucumber, cheese and garlic aioli - YUM!
Here’s the version I make:

📝 Ingredients
• 500g lamb mince
• 1 small onion, grated into a paste
• 3 tsp minced garlic
• 1 tsp salt
• 2 tsp sweet paprika
• 1½ tsp oregano
• ¼ cup plain yogurt
• 1 tbsp olive oil

🔥 How I Made It
1. Preheat oven to 200°C (400°F).
2. Mix the lamb mince with the onion paste, garlic, yogurt, olive oil and spices until well combined.
3. Divide the mixture into two portions.
4. Press each portion out onto a sheet of baking paper into a thin, even rectangle (wet fingers stop sticking!).
5. Roll the baking paper over the meat from the long edge to form a long, flat cylinder shape.
6. Transfer both rolls to a baking tray and bake for 40 minutes or until cooked through.
7. Let them cool slightly, then unwrap and break the meat apart into small pieces.
8. Squeeze over a little fresh lemon juice.
9. Pop it back into the oven for a few minutes to crisp up those irresistible edges.
10. Serve warm in souvlaki/pita with your favourite toppings.
