Cheesy Beef Meatball Subs with Tomato Sauce and Melted Mozzarella

The BEST crusty hot dog rolls filled with meatballs coated in a tomato sauce with melted cheese on top.

Ingredients
For the meatballs:
500g beef mince
60g (¾ cup) panko crumbs
1 tsp onion powder
1 tsp garlic powder
2 tsp dried Italian seasoning
1/2 cup parmesan cheese, grated
1 egg
salt and pepper
For the tomato sauce:
2 tbsp olive oil
2 tsp minced garlic
1 brown onion, finely diced
1 tbsp balsamic vinegar
2 tsp dried Italian herbs (parsley, oregano, thyme etc)
800g diced tomatoes, tinned
2 tsp caster sugar
125ml water (only if needed)
To serve:
4 hot dog rolls
1 cup mozzarella, grated
Method
Prepare the meatballs
Preheat the oven to 200 degrees Celsius (fan-forced). Line a flat baking tray with baking paper and set aside.
Place all the meatball ingredients into a bowl and mix until well combined.
Take two tablespoon-sized scoops of the mixture and roll into balls.
Place onto the baking tray. Repeat until all of the mixture has been used.
Bake in the oven for 20 minutes or until cooked through.
While the meatballs are cooking, prepare your tomato sauce.
Cook The Tomato Sauce
Heat the olive oil in a large frying pan over medium heat.
Add the garlic and onion and cook, stirring, for 2-3 minutes or until the onion has softened.
Add the balsamic vinegar, Italian herbs, diced tomatoes and caster sugar. Stir until simmering. Allow to simmer for 10 minutes.
If the sauce is too thick, add ½ cup of water and stir through.
Once the meatballs have cooked, stir them through the tomato sauce until coated.
Assemble The Subs
Cut a slit down the centre of the buns (approximately two-thirds of the way down.
Fill with the meatballs and spoon over some extra sauce.
Sprinkle with grated mozzarella.
Place into the oven with the grill on (or directly under a grill). Cook until the cheese is melted and lightly golden. Serve immediately.
