Portuguese-Style Chorizo Pasta Salad
Ingredients:
1 1/2 cups spiral or penne pasta
2 chorizo sausages, sliced
1 red capsicum, diced
1 small red onion, finely sliced
1 cup cherry tomatoes, halved
1/2 cup black olives, pitted
1/4 cup parsley, chopped
1/3 cup olive oil
2 tbsp red wine vinegar
1 tsp smoked paprika
Salt and pepper, to taste
Instructions:
Cook the pasta according to packet instructions. Drain and rinse under cold water. Set aside.
Cook the chorizo in a large pan over medium heat for 3–4 minutes until golden and crispy. Remove from heat and let cool slightly.
In a large bowl, combine cooked pasta, chorizo, capsicum, onion, cherry tomatoes, olives, and parsley.
Make the dressing by whisking together olive oil, red wine vinegar, smoked paprika, salt, and pepper.
Pour the dressing over the pasta salad and toss well to combine.
