Grilled Mexican Chicken Skewers
Juicy marinated chicken grilled to perfection with vibrant bell peppers—packed with smoky flavor and finished with a sprinkle of fresh cilantro!
Ingredients 🛒
1.5 lbs chicken breast, cubed
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
1 red onion, chopped
2 tbsp olive oil
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
Fresh chopped cilantro (for garnish)
Wooden or metal skewers
Directions 👩🍳
1️⃣ Marinate Chicken: In a bowl, mix chicken with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Let sit for 30 minutes.
2️⃣ Skewer: Alternate threading chicken, peppers, and onion onto skewers.
3️⃣ Grill: Cook on a preheated grill over medium-high heat for 10–12 minutes, turning occasionally, until nicely charred and fully cooked.
4️⃣ Serve: Garnish with chopped cilantro and enjoy with rice, tortillas, or salad!
