Rich and Savory Crack Chicken Gnocchi
Ingredients:
1 lb chicken breast, cooked and shredded
1 tablespoon olive oil
1 packet ranch seasoning mix
8 oz cream cheese, softened
1 cup chicken broth
1 cup heavy cream
1/2 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
16 oz gnocchi (store-bought or homemade)
2 tablespoons bacon bits (optional)
1/4 cup chopped green onions
Salt and pepper to taste
Directions:
Heat olive oil in a large skillet over medium heat. Add shredded chicken and ranch seasoning mix, stirring to coat.
Add cream cheese, chicken broth, and heavy cream to the skillet. Stir well and bring to a simmer, allowing the cream cheese to melt and the sauce to thicken.
Stir in shredded cheddar cheese and grated Parmesan, continuing to simmer until the sauce is smooth and creamy.
While the sauce is simmering, cook the gnocchi according to the package instructions. Drain and set aside.
Once the sauce is thickened, gently fold in the cooked gnocchi and stir to coat evenly.
If desired, top with bacon bits and chopped green onions.
Season with salt and pepper to taste and serve hot.
