What could be better than a batch of Super Green Soup? Today’s recipe has 10 different plants and is packed with protein 🌱👌💯😍
I’ve made a huge batch to keep the family going throughout the week and a couple of slices of @jasonssourdough protein seeded sourdough rounds each serving off nicely with another 20g + of protein 🙌🤩
Although I’ve included the recipe below for the exact batch I made, this is a very adaptable soup - use whatever green vegetables and herbs that you have or want. It’s a great way of using everything up in the fridge.
I had parsley and coriander to use up but would have loved to use basil, parsley and mint. I also would have added a large amount of nutritional yeast but sadly ran out of it the day before 🥲
Recipe - makes lots!! 2 white onions, diced 4-6 celery stalks, chopped 3-4 garlic cloves, sliced 1 large head of broccoli, broken into florets 2 vegetable stock 2 cups frozen peas 1-2 cups frozen soya beans 1 can cannellini beans, drained 2 large handfuls spinach 1 large handful green herbs (e.g parsley, basil, mint, coriander - can be a mixture Salt and pepper to season
Method - gently fry the onion and celery in a large deep bottomed pan for a few minutes before adding the garlic - Add the broccoli and cover with boiling water. Add the stock cubes - Put the lid on and simmer for 5-10 minutes to soften the broccoli a little - Add the peas, soya beans , cannellini beans, stirring and simmering for another 3-4 minutes before - Add the spinach and herbs, stir to wilt them and then blitz with a stick blender until smooth - Bring back to the heat and season to taste - Add a little more boiling water at any point if necessary - Enjoy ☺️
