🇲🇽SYNFREE ONE POT TACO RICE🇲🇽
RECIPE - serves 4 (#synfree and one #healthyextra per portion)
4 garlic cloves, minced
500g 5% beef mince
1 onion, diced
250 g basmati rice
750 ml beef stock
1 x 400g tin chopped tomatoes
1 large carrot, diced
1 courgette, diced
1 red pepper, diced
½ teaspoon chilli powder
2 teaspoon cumin powder
2 teaspoon paprika
2 teaspoons ground coriander
2 tablespoon tomato puree
70g @eatlean red protein cheese (a)
120g grated mozzarella (3a)
@spicentice nacho feast kit
Fry off the onions, peppers, carrots and courgette until starting to soften. Then add the beef and brown
Add the dried rice, spices, tomatoes, stock and puree and simmer on low for around 15 minutes (lid on) stirring occasionally
Add the cheese to the top and return the lid and simmer for a further 5 minutes.
I served mine with Mexican corn ribs, roasted mini peppers & dips (the teenager had garlic bread with his too)
