Sticky sesame chickpeas with noodles & asparagus. Another one of my go to lunches that only takes 15 mins to make!
Recipe below (serves 2):
Ingredients:
1 can (400g) of chickpeas
100g asparagus
150g rice noodles (or 2 nests)
2 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame oil
1 tsp agave
Juice of quarter lime
1 tsp cornflour mixed with 1 tbsp water
Sesame seeds & chilli flakes to serve
Method:
1. Heat a pan with a drizzle of olive oil & pinch of salt, cook asparagus for 10 mins turning regularly
2. Cook your rice noodles as per packet instructions, when cooked add a dash of soy sauce & sesame oil
3. Heat a separate pan & add all sauces, lime & cornflour slurry – stir to combine
4. Add chickpeas to pan & stir occasionally until the sauce goes sticky
5. Serve & top with sesame seeds, chilli flakes & more lime
