ingredients:
8 eggs
1 cup cottage cheese
1/2 tsp salt, 1/2 tsp pepper
toppings of choice: i did cherry tomato, feta & kale
directions:
preheat oven to 350 f. blend eggs, cottage cheese, salt and pepper. pour into greased muffin tin and add your toppings. bake for 25-28 minutes, let cool, and enjoy!
