•Whole Spices
- 3 green cardamom (lightly bruised)
- 3 whole cloves
- 2 star anise
- 1 cinnamon stick
- ½ tsp cumin seeds
- 1 curry leaf stalk (omit if unavailable)
•Aromatics
- 1 – 1½ tbsp vegetable oil
- 1 medium red onion / 4 large shallots (finely diced)
- 4 large garlic cloves (finely minced)
- 1" ginger (peeled & grated)
•Ground Spices
- 2 tsp ground coriander
- 1¼ tsp garam masala
- 1 tsp ground turmeric
- ½ tsp chili powder
- a pinch of hing / asafoetida (omit if unavailable)
•1 – 14.5 oz can diced fire roasted tomatoes
•Kurma Paste (blend)
- 1/3 cup water
- ¼ cup coconut milk
- 1½ tbsp cashew nut concentrate @addjoi
- 1 tbsp roasted split mung bean / chickpeas
- 1 tsp roasted fennel seed
•Vegetables & Herb
- 1 cup cauliflower
- 1 cup potatoes
- 1 cup carrots
- ¾ cup cooked chickpeas
- ¾ cup frozen green peas (thawed)
- a few stalks of cilantro
•1½ cups water
-1½ tsp salt or to taste
-1 tsp black pepper or to taste
-1 tsp monk fruit sweetener (optional)
-chopped cilantro (garnish)
