Toast has to be my ultimate comfort food, I absolutely adore it plain or with any kind of topping 🥰
This evening’s toast topper is so easy, fresh and healthy to make, tastes divine and packs a big protein punch 💪💯😍
Deets
1 cup cooked edamame beans
1-2 ripe avocados
1 tbspn nutritional yeast
Large handful of basil
1 lime, juiced
Salt and pepper
Add all the ingredients to a food processor and blitz to reach your required consistency (leave some texture - you might not want it too smooth)
Spread onto toasted sourdough. I’ve topped fine with cucumber ribbons and lightly pickled radishes, black and white sesame seeds
