HARISSA PASTA 💚
This protein packed pasta is so good. It’s perfect for dinner and leftovers for lunches. If you use protein pasta as well, it’s absolute goals 💪🙌😍
Ingredients for the sauce
(Serves 4 or more - or keep some for another day)
1 bunch basil
3-4 flame roasted peppers from a jar
1 tin chickpeas, lightly drained (keep the drained liquid)
50g sundried tomatoes (from a jar)
1 tbspn harissa paste
4 tbspn nutritional yeast
2 tbspn oil from the sundried tomato jar
Salt and pepper
Method
- Add all the pasta sauce ingredients to a blender and blitz until smooth, add a little extra liquid from the drained chickpeas if needed
- Cook your pasta, drain and reserve some of the pasta water
- Pour the sauce into a pan, adding a ladle of the pasta water and stir through
- Tip the pasta into the pan and stir through the sauce until fully coated
- Season with cracked black pepper and enjoy 😊
