Directions
In a large bowl, whisk together the flour and salt.
Add cold butter pieces and lightly toss to coat in the flour—leave large visible chunks for flakiness.
Pour in ice water gradually, mixing just until the dough begins to come together. Do not overmix.
Shape into a rough rectangle, wrap in plastic wrap, and chill for 30 minutes.
Roll out dough into a long rectangle, fold into thirds (like a letter), then rotate 90°.
Repeat rolling and folding 5 more times, chilling between every 2 folds.
After the final fold, wrap and refrigerate for 1–2 hours before using.
