Ingredients • 1½ cups (190g) all-purpose flour • 1 teaspoon baking powder • ¼ teaspoon salt • 1 cup (225g) unsalted butter, softened • 1 cup (200g) sugar • 4 large eggs (at room temperature) • 1 teaspoon vanilla extract • ¼ cup (60ml) milk
Instructions
Preheat oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.
In a bowl, whisk together flour, baking powder, and salt.
In another large bowl, beat the butter and sugar together until light, fluffy, and pale — about 3–5 minutes. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Add the dry ingredients in two batches, alternating with milk, and mix gently until smooth. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–55 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
