EASIEST CHICKPEA CURRY

Recipe:
Serves 2-3
Ready in 15 minutes
ingredients:
1 can chickpeas drained
4 tbsp crushed tomatoes
1 cup unsweetened plant milk
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp garam masala
1 tbsp turmeric
1 tbsp curry powder
1/2 tsp smoked paprika
2 cups baby spinach
Black pepper and crushed red pepper to your taste
1/2 cup chopped cilantro
1 cup basmati rice

Instructions:
1. Put on rice to cook according to package.
2. In a pan over medium heat add chickpeas, tomatoes, plant milk, and dry spices. Bring to a boil and stir often. Turn down to simmer and add spinach, black pepper and crushed red pepper.
3. Serve with rice and garnish with cilantro
