GINGERBREAD COFFEE CAKE COOKIES
Ingredients:
Gingerbread Dough:
* 1 cup butter softened
* 1 cup brown sugar
* 1 egg
* 1/3 cup molasses
* 1 tsp vanilla
* 3 cups flour 360 grams
* 2 tsp cinnamon
* 1 tsp ginger
* 1 tsp salt
* 1/2 tsp baking soda
* 1/2 tsp baking powder
streusel:
* 1/2 cup butter softened
* 1/2 cup brown sugar
* 1 cup flour 120 grams
* 1 tsp cinnamon
* pinch of salt
icing:
* 1/2 cup powdered sugar
* 1 tsp milk
* splash of vanilla
instructions
* Preheat oven to 350F. Add softened butter and brown sugar, mix for 3-4 minutes, until the mixture is lighter and fluffy.
* Add egg, molasses, and vanilla. Mix.
* Add flour, cinnamon, ginger, salt, baking soda, and baking powder. Mix.
* Make streusel: mix softened butter, brown sugar, flour, cinnamon, and salt.
* Use large cookie scoop to scoop the gingerbread dough. Using backside of scoop, make an indent on the top of the dough. Sprinkle a few tablespoons of the streusel on the top of the cookie.
* Bake for 8-10 minutes. Let the cookies cool on the cookie sheet for 10 minutes.
* While cookies cool, make icing. Add the powdered sugar, milk, and vanilla to a bowl. Whisk until smooth.
* When the cookies are cooled, drizzle each cookie with icing. Enjoy!
