PEANUT BUTTER CHICKEN 🍛
So I’ve made this sooo many times on my page and I always get asked for the recipe. So instead of sending you to the @bbcgoodfood website I will put it below for anyone interested. This was made for 2 people 😍
In a frying pan add 1 tbsp of ginger purée, 2 minced up garlic cloves, handful of minced fresh coriander and 1 fresh red chilli 🌶️ and allow that to cook for until fragrant then add in peppers (optional) and fry off for a few more mins… I like my peppers to have a crunch!
Then add in 2 diced chicken breasts, I use the @musclefooduk ones but you can use whatever ones you have ☺️ and turn the heat up and fry the chicken until seared on all sides 🔥
Then add in 200ml of fat free natural yoghurt, 150ml of chicken stock and 40g of peanut butter 🥜 (you can use peanut powder for lower calories) then give that a good stir and allow to simmer for 20-25 mins, stirring occasionally. Whilst this is simmer put on your rice (I use 75g per person dried) and serve 😍
