🍓 Crimson Choco-Berry Rhapsody Cheesecake 🍫
A decadent dessert where rich, creamy cheesecake meets a swirl of tangy berries and velvety chocolate—a true indulgence!
Ingredients:
For the Crust:
1 ½ cups chocolate cookie crumbs (such as Oreos)
¼ cup granulated sugar
½ cup unsalted butter, melted
For the Cheesecake Filling:
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup sour cream
1 tbsp all-purpose flour
For the Choco-Berry Swirl:
1 cup fresh strawberries, mashed
¼ cup sugar
1 tbsp lemon juice
½ cup semi-sweet chocolate chips
Instructions:
1️⃣ Preheat the oven to 325°F (163°C) and line a 9-inch springform pan with parchment paper.
2️⃣ In a bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the pan. Bake for 10 minutes, then remove and cool.
3️⃣ In a large bowl, beat softened cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each. Stir in sour cream and flour until fully combined.
4️⃣ For the choco-berry swirl, cook mashed strawberries, sugar, and lemon juice in a saucepan over medium heat for 5 minutes until thickened. Cool slightly, then mix in melted chocolate.
5️⃣ Pour cheesecake filling over the cooled crust. Drop spoonfuls of the berry-chocolate mixture on top, then swirl gently with a knife.
6️⃣ Bake for 55-60 minutes, or until the center is set but still slightly wobbly. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
7️⃣ Garnish with fresh berries and chocolate shavings before serving!
