Chicken pad see ew!

I made this a few weeks ago - the recipe was from @recipe_tin . Everything on her website is fantastic, I highly recommend. 👍👍

Ingredients:
400g pad Thai rice noodles
400g chicken breast (raw) - can use thigh instead
5 cloves garlic
250g cooked Chinese broccoli
2 tbsp vegetable oil
2 eggs

Sauce
5 tsp dark soy sauce
4 tbsp oyster sauce
2.5 tbsp light soy sauce
5 tsp white wine vinegar
5 tsp sugar

Macronutrients per serving (serves 5)
Calories: 508
Protein: 35g
Carbohydrates: 73g
Fat: 9.7g

Method:
1. Trim ends of Chinese broccoli; separate leaves from stems, cutting thick stems in half.
2. Prepare noodles in accordance with packet instructions.
3. Mix sauce ingredients.
4. Finely dice garlic and chop chicken into smaller pieces.
5. Heat oil in a large wok over high heat. Cook garlic and chicken, until chicken has mostly changed from pink to white.
6. Add Chinese broccoli stems and cook until chicken is almost cooked through.
7. Add Chinese broccoli leaves and cook until just wilted.
8. Push everything to one size and crack eggs on other side of pan. Scramble.
9. Remove everything from wok and scrape clean.
10. Return wok to stove and head another tbsp oil over high until into it starts smoking. Add noodles and sauce. Toss as few times as possible to disperse sauce - for about 1.5 minutes.
11. Add chicken and veg back in and toss to combine.
12. Divide into 5 portions.
