They are the perfect balance of chewy, chocolatey, sweet and salty and they are gluten-free, dairy-free, and refined sugar free 🙌🏻 I have made 6 batches of them in the last two weeks...someone please stop me. Ingredients: ½ cup coconut oil 1 1/2 cups coconut sugar ½ cup almond milk ¼ cup raw cacao powder ¼ teaspoon salt 3 cups rolled oats ¾ cup creamy peanut butter 2 teaspoons vanilla extract 1 cup dairy-free chocolate chips (divided) 1 teaspoon coconut oil flaky sea salt for topping
Instructions: Add the 1/2 cup coconut oil, coconut sugar, raw cacao powder, milk, and salt to a medium saucepan and bring to a boil. Boil for 1 minute. Remove from the heat and add the peanut butter, oats, and vanilla, stirring to incorporate. While the mixture is still warm, sir in 1/2 cup of chocolate chips. Drop large spoonfuls of the cookie mixture onto a parchment-lined cookie sheet and flatten to your desired thickness. Refrigerate for at least an hour. Melt the remaining 1/2 cup of chocolate chips with 1 teaspoon of coconut oil. Drizzle over the top of the cookies and sprinkle with flaky salt. Enjoy! Store in the refrigerator. (Makes about 20 cookies)
