Smoky Roasted Tomato & Red Pepper Delight
ROASTED VINE TOMATO & RED PEPPER SOUP 🍅
With my new @haieruk blender *gifted
Ingredients (Serves 1–2)
• 400g vine tomatoes, halved
• 1 red pepper, sliced
• ½ onion, sliced
• 2 cloves garlic, whole
• 1 tbsp olive oil
• ½ tsp smoked paprika
• ½ tbsp tomato purée
• 250–300ml veg stock
• 75–100ml double cream or 150ml coconut milk
• ½ tsp chilli flakes (optional)
• ½ tbsp balsamic vinegar or a squeeze of lemon
• Salt + black pepper

Method
Add tomatoes, red pepper, onion + garlic to a tray.
Toss with olive oil. For this I used my new @coleandmason olive oil pourer (gifted)
Then added smoked paprika, salt + pepper. Roast at 200°C (180°C fan) for 20 mins until softened and slightly charred.
Add roasted veg to a blender with tomato purée + 250ml stock. Blitz until smooth.
(Add more stock if you want it thinner.)
Pour into a pot, add cream/coconut milk, and simmer 5 mins on low.
Season with salt, pepper + balsamic/lemon.
Top with basil oil, cream swirl, chilli oil or croutons.
