Tahini Sauce (Lebanese)πŸ‡±πŸ‡§πŸ‡±πŸ‡§πŸ‡±πŸ‡§πŸ‡±πŸ‡§πŸ‡±πŸ‡§
Ingredients:
β€’ 1/2 cup tahini paste
β€’ 3 tablespoons fresh lemon juice
β€’ 2 cloves garlic, minced
β€’ 1/4 cup cold water (more as needed)
β€’ 1/2 teaspoon salt
β€’ 1/4 teaspoon ground cumin
β€’ 2 tablespoons fresh parsley, finely chopped
β€’ 1 tablespoon extra virgin olive oil
β€’ Pinch of paprika for garnish
Preparation:
1. In a medium bowl, whisk together tahini and lemon juice. The mixture will thicken and seize.
2. Add minced garlic and salt, whisking to combine.
3. Gradually whisk in cold water, 1 tablespoon at a time, until the sauce reaches your desired consistency. It should be smooth and pourable but not watery.
4. Stir in ground cumin and chopped parsley.
5. Transfer to a serving bowl, drizzle with olive oil, and sprinkle with paprika.
6. Store in an airtight container in the refrigerator for up to 5 days. May thicken when chilled; thin with additional water if necessary.
Perfect Pairings:
1. Falafel - Classic combination in Middle Eastern cuisine
2. Grilled Meats - Particularly lamb or chicken shawarma
3. Roasted Vegetables - Especially cauliflower, eggplant, or sweet potatoes
4. Fresh Pita - Essential component for sandwiches or as a dip
