Ingredients:
For Peri Peri Marinade:
Red chillies (fresh or dry) β 6β8 (adjust spice level)
Garlic β 6β8 cloves
Red bell pepper β 1 (roasted or fresh)
Lemon juice β 2 tbsp
Vinegar β 1 tbsp
Paprika β 1 tsp
Smoked paprika (optional) β Β½ tsp
Red chilli powder β Β½ tsp
Salt β to taste
Black pepper β Β½ tsp
Olive oil β 3 tbsp
For Chicken:
Chicken (whole, cut into pieces or boneless thighs) β 1 kg
Butter β 1 tbsp (for basting)
Method:
Make the Peri Peri Sauce:
Blend red chillies, garlic, bell pepper, lemon juice, vinegar, paprika, salt, pepper, and olive oil into a smooth paste.
Marinate the Chicken:
Coat chicken evenly with the peri peri marinade.
Let it rest for at least 2 hours (overnight for best flavor).
Cooking Options:
Grill: Grill on a barbecue or grill pan till golden and cooked through, basting with butter occasionally.
Oven: Preheat oven to 200Β°C and bake for 30β35 minutes, flipping halfway.
Pan Fry: Cook on medium heat in a non-stick pan, turning until evenly browned and cooked.
Final Touch:
Brush some leftover peri peri sauce and butter on top for extra shine and spice.
