Vegan Teriyaki Tofu Noodles🍜

Recipe:
Ingredients:
- For the tofu:
- 400g firm tofu
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 clove garlic, minced
- 1 tsp ginger, grated
- For the noodles & vegetables:
- 200g any noodles
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 1/2 cup spring onions, chopped
- 1 tbsp vegetable oil
- For the teriyaki sauce:
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 clove garlic, minced
- 1 tsp ginger, grated
- Garnish:
- Sesame seeds
- Fresh coriander, chopped
Method:
1. Press the tofu by wrapping it in a kitchen towel & placing it on a plate. Put a heavy object on top. Press for at least 15 minutes.
2. Cut the pressed tofu into cubes. In a bowl, mix soy sauce, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. Add tofu and toss to coat. Marinate for at least 20 minutes.
3. Cook the noodles according to the package instructions. Drain and set aside.
4. Heat vegetable oil in a large pan over medium heat. Add the marinated tofu and cook until golden brown on all sides. Remove tofu from the pan and set aside.
5. In the same pan, add sliced red bell pepper and mushrooms. Stir-fry for about 5 minutes until the vegetables are tender.
6. In a bowl, whisk together soy sauce, maple syrup, rice vinegar, cornstarch slurry, minced garlic, and grated ginger to make the teriyaki sauce. Pour the sauce into the pan with the vegetables and stir well.
7. Add the cooked noodles and tofu to the pan. Toss everything together until well coated with the sauce.
8. Garnish with sesame seeds and chopped fresh coriander before serving.
