There’s something so easy and satisfying in this Chick’n Katsu - it takes less than 30 minutes from start to finish, involves no skill (like most of my meals 🤣) and tastes incredible 👌💯😍

Katsu sauce 1 large Onion, diced 6 Garlic cloves, crushed 1 large Carrot, chopped 1 tbspn Curry powder 500ml Vegetable stock 1 tbspn soy sauce 1-2 tspn maple syrup
To make the Katsu sauce 1. Gently fry the onion in a little poor spray oil until softened 2. Add the garlic and continue to fry for another couple of minutes 3. Stir in the curry powder and cook through for another couple of minutes before adding the carrots and vegetable stock, and simmer gently until the carrots are tender 4. Add the soy sauce and maple syrup, stir through and check the seasoning. You shouldn’t need to add any salt because of soy sauce 5. Blitz with a stick blender, return to the heat and bring back up to temperature
Once you’ve cooked and plated the rest of your Katsu bowl, top the chick’n with Katsu sauce, spring onions, red chilli and sesame seeds
