I love a one pan dinner and these Thai red curry noodles with marinated tofu and gyozas are such a treat and soo easy to make 👌💯😍
Ingredients Served 4
1 white onion, finely diced 2 tspn garlic and ginger paste 2 tbspn Thai red curry paste - @bluedragonuk 1/2 can coconut milk - @coconutmerchant 1.5 ltr vegetable stock 2 carrots, peeled and shredded 2 handfuls sugar snap peas 1 red pepper, sliced 4 rice noodle nests - @bluedragonuk 12 vegetable gyozas- @itsuofficial 1 pack @cauldronfoods marinated tofu 2-3 spring onions, finely sliced Fresh coriander Red chillis, finely sliced Sesame seeds
Method - gently sauté the onion in a large pan until softened - Add the garlic and ginger paste and stir through before adding the curry paste - Stir through and add the coconut milk, followed by the stock - Stir through and let it heat up before adding the noodles and vegetables - Simmer for a couple of minutes with the lid on, before adding the gyozas. Place the lid back on and simmer for another 2-3 minutes until the gyozas are cooked through - Top with marinated tofu, spring onion, coriander, chilli and spring onions (or divide between 4 bowls before adding the toppings) - Enjoy ☺️
