Recipe:
Ingredients:
- 2 cups cooked chickpeas (or 1 can, drained and rinsed)
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 green chillies, slit lengthwise
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- 1 tsp salt (adjust to taste)
- 1 cup water
- Fresh coriander leaves, chopped, for garnish
Method:
1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them splutter.
2. Add the finely chopped onions and sauté until they turn golden brown.
3. Stir in the minced garlic, ginger, and green chillies. Cook for another 2 minutes until fragrant.
4. Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.
5. Mix in the ground coriander, ground cumin, garam masala, turmeric powder, chilli powder, and salt. Stir well and cook for 2-3 minutes to let the spices blend.
6. Add the cooked chickpeas to the pan and mix well, ensuring they are coated with the spice mixture.
7. Pour in the water, stir, and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, allowing the flavours to meld and the sauce to thicken.
8. Garnish with freshly chopped coriander leaves and serve hot with rice, naan, or your favourite flatbread.
