ASIAN STYLE ‘CAESAR’ SALAD:

SERVES 2: Difficulty ⭐️
⏲️ PREP: 20 Minutes.
📌 The Croutons: Roughly cut 1 ciabatta roll into pieces and add to a bowl. Season with a pinch of sea salt. Finely chop the 4 or 5 coriander stalks and the green part of 1 spring onion. Add to the bowl and add 2 tbsp olive oil mix well making sure all the croutons are well coated. Pop them on a baking tray and cook for 10-12 minutes in preheated oven at 200°C. Leave to cool.
📌 The Dressing: In a small bowl add the juice of 3 limes, the zest of 1 lime, 1/2 tbsp fish sauce, 1 minced garlic clove, 1/2 tsp Dijon mustard and 2 tbsp extra virgin olive oil. Mix well.
⏲️ COOK: 35 Minutes.
🥬 Season 2 chicken breasts with salt and pepper and spray with sunflower oil. Pop them on a baking tray and cook for 20 minutes in a preheated oven at 200°C. Once cooked leave to rest for 10 minutes before slicing.
🥬 Wash and chop 1 Romaine lettuce or 2 little gem lettuces add them to a large bowl and add the croutons and half the dressing. Add 1/2 tsp of black and white roasted seeds and toss everything together.
🥬 Serve the lettuce and croutons with the sliced chicken on top and drizzle over the remaining dressing. Serve and enjoy 😉
