WHAT DO YOU NEED? 📝
• 1 tbsp olive oil
• 150g chorizo (diced)
• 500g beef mince
• 1 onion (finely chopped)
• 2 garlic cloves (minced)
• 1 red pepper (chopped)
• 2 tsp smoked paprika
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tbsp tomato purée
• 400g chopped tomatoes (tinned)
• 400g kidney beans (drained & rinsed)
• 250ml beef stock
• 3 tbsp honey (adjust to taste)
• Salt & pepper to taste

Optional Garnishes:
• Fresh coriander
• Sliced red chilli
• Sour cream or Greek yoghurt

LETS COOK 👩‍🍳
🧑‍🍳 Heat olive oil in a large pan over medium heat.
🧑‍🍳 Add the diced chorizo and cook for 3-4 mins until crispy and the oil turns a deep orange.
🧑‍🍳 Add the beef mince to the pan and brown it for 5-7 mins, breaking it up with a spoon.
🧑‍🍳 Stir in the onion, garlic, and red pepper. Cook for 5 mins until softened.
🧑‍🍳 Add the smoked paprika, cumin, coriander, and tomato purée. Stir well and cook for 2 mins to release the spices’ aromas.
🧑‍🍳 Pour in the chopped tomatoes and beef stock. Stir through the kidney beans.
🧑‍🍳 Simmer uncovered for 25-30 mins until thickened.
🧑‍🍳 Stir in the honey during the last 5 mins of cooking. Taste and adjust if you want it sweeter or spicier.

🍴 Serving Suggestions:
• Serve with rice, tortilla chips, or a baked potato.
• Drizzle extra honey over the chilli for a sticky, glossy finish.
