Ingredients:
For the Chicken Marinade:
2 large chicken breasts (or 4 chicken thighs)
3 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess water
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill)
Salt and pepper, to taste
For Assembly:
4 pita bread or flatbreads, warmed
1 small red onion, thinly sliced
1 cup diced tomatoes
1/2 cup chopped fresh parsley
Directions:
Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken, ensuring it’s well coated. Cover and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
Prepare the Tzatziki Sauce: In a small bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and dill. Season with salt and pepper to taste. Mix well and refrigerate until ready to serve.
Cook the Chicken: Heat a grill or skillet over medium-high heat. Cook the chicken for 4–5 minutes per side, or until fully cooked and lightly charred. Remove from heat and let rest for 5 minutes before slicing into strips.
Assemble the Gyros: Warm the pita bread and layer with chicken strips, sliced red onion, diced tomatoes, and a generous drizzle of tzatziki sauce. Garnish with fresh parsley.
