🍗 Chicken Breasts with Roasted Garlic & Sun-Dried Tomato Cream
Ingredients (Serves 4):
For the chicken: • 4 chicken breasts • 2 tbsp olive oil • Salt & black pepper • 1 tsp smoked paprika
For the sauce: • 1 whole garlic bulb • 1 tbsp olive oil • ½ cup sun-dried tomatoes in oil, chopped • 1 shallot, finely diced • ½ cup chicken broth • 1 cup heavy cream • ½ cup Parmesan cheese, grated • 1 tsp fresh thyme leaves • Salt & black pepper
For garnish: • Fresh basil leaves • Extra chopped sun-dried tomatoes
Instructions: 1. Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 375°F (190°C) for 30–35 min until soft. Squeeze out roasted cloves. 2. Season chicken with olive oil, paprika, salt, and pepper. Sear in a hot skillet until golden and cooked through. Remove. 3. In the same skillet, sauté shallot and sun-dried tomatoes until fragrant. Add roasted garlic paste, chicken broth, and cream. Simmer until slightly thickened. 4. Stir in Parmesan and thyme. Return chicken to skillet, coat with sauce, and simmer a few minutes. 5. Garnish with basil and extra tomatoes before serving.
