Green Pea Stew with Smoked Tofu

(Ready in about 40 minutes / Serves 4)

Ingredients
1 medium leek, chopped
1 large carrot, sliced
1 parsnip, sliced
2 garlic cloves, minced
2 cups vegetable broth
1 cup tomato sauce
1 pound green peas
4 ounces smoked tofu, cubed

Directions
Preheat a stockpot over medium-high heat. Once hot, sauté the leek, carrot, and parsnip for about 4 minutes, adding a few tablespoons of water and stirring continuously.
Then, sauté the garlic for about 30 seconds, until aromatic.
Add the broth to the pot and bring it to a boil; add the tomato sauce and green peas and turn the heat to a simmer.
Let it simmer, partially covered, for about 30 minutes.
Ladle green pea stew into serving bowls and top them with smoked tofu. Enjoy!
