Greek chicken with roast veggies, tzatziki mayo and pita bread! Loved it.

🍗Ingredients
1/2 Greek butterflied marinated chicken from Woolworths
200g mushrooms
450g red capsicum
180g green capsicum
350g zucchini
130g red onion
180g egg plant
300g spud light potatoes
2 slices pita bread
100g skinny tzatziki
60g fat free mayonnaise
Optional: Greek seasoning for veggies; 3 tbsp oregano; 2 tbsp basil; 1 tbsp dill; 2 tbsp onion powder, 2 tbsp garlic powder, ½ tablespoon salt, 1 tbsp black pepper

👩‍🍳Method:
1. Cook chicken in accordance with packet instructions (mine said bake in oven on 180 degrees for approx 50-55 mins).
2. Chop up vegetables and season with Greek seasoning, place in air fryer or oven on 180 degrees for 20-30 minutes or until cooked to desired crispiness.
3. Combine tzatziki and mayonnaise and divide into 5 small containers.
4. Divide cooked chicken, veggies and pita bread into 5 portions.
