ONION BHAJI FRITATTA
SYNFREE 🙌🏼🙌🏼🙌🏼
6~8 large eggs (it depends on the size of your onions/peppers.. I start with 6 and you can always add more if 6 doesn’t cover the mixture)
Tin new potaoes sliced
2 garlic cloves grated/ minced
1 red/1yellow pepper sliced
2 large onions sliced
100g frozen peas
2 tsp curry powder
1 tsp of tumeric, garam masala and chilli ( chilli to taste I like it spicy)
Chopped coriander (some in the mix some for garnish)
Fry off the onions and peppers with garlic until soft
Add the spices and mix to coat the onions/ peppers and cook off the spices
Stir in the peas and sliced potaoes and pour over the eggs and a handful of chopped coriander
Bake in the oven for 20-25 minutes until golden and set
Serve warm or cold with salad and a mint dip
