Vegan Chow Fun

(2 servings)

Recipe:
200g homemade flat rice noodles
1/2 block of firm tofu, diced
100g choy sum
Handful mung bean sprouts
3 cloves garlic, chopped
1 small onion, chopped
2 tbsp vegetarian oyster sauce
1 tbsp soy sauce
1 tbsp sesame oil
1/2 tsp white pepper
1 tsp dark soy sauce (optional)
1/4 cup water, as needed
Oil for cooking

Method:
Heat oil and pan fried the tofu till till browned, ser a side then add in the garlic and onion, sauté till fragrant.

Add in the choy sum, cook for 2 minutes, next add in the homemade flat rice noodles, vegetarian oyster sauce, sesame oil, soy sauce, white pepper, water and dark soy sauce for colouring.

Stir fry for another few more minutes then add the mung bean sprouts. Stir fry till all well combine and transfer to the serving plate and enjoy with Sambal or garlic chilli sauce.
