Italian wild rice soup

Ingredients
1 tbsp olive oil
1 large onion, chopped
3 garlic cloves, finely chopped
1 tsp sea salt
1 tbsp tomato purée
400g tin chopped tomatoes
1.5 liters of vegetable stock
1 tbsp vegan Worcestershire sauce
400g tin cannellini beans, drained and rinsed
750g potatoes, chopped
3-4 large carrots, chopped into chunks
2 tsp of Italian allrounder
1 cup rice (I used a combo of wild, brown and red rice)
Salt and pepper
Juice of 1/2 lemon
Chopped parsley
Method
1️⃣ Add the onion to a large pan with the oil and 1 tsp of sea salt and sauté for 5 mins then add the garlic and cook for a minute or two more
2️⃣ Add the tomato purée, tinned tomatoes, carrots, potatoes, beans, sauce, spices and stock and stir well
3️⃣ Finally add the rice and cook for about 40 minutes or until the rice is cooked
4️⃣ Season well, top with some chopped parsley, a squeeze of lemon juice and serve 😋
