🍳 Crispy Potato Nests with Eggs, Avocado & Chorizo
Ingredients (Serves 4):
For the nests: • 3 medium potatoes, grated • 2 tbsp olive oil • Salt & black pepper
For the filling: • 4 eggs • 1 avocado, sliced • ½ cup cooked chorizo, crumbled • Fresh cilantro or parsley • Chili flakes (optional)
Instructions: 1. Preheat oven to 400°F (200°C). Grease a muffin tin. 2. Squeeze excess liquid from grated potatoes, season with salt, pepper, and olive oil. 3. Press potatoes into muffin cups, shaping nests. Bake 20–25 min until golden and crisp. 4. Crack an egg into each nest and bake 7–9 min until whites are set but yolks still soft. 5. Top with avocado slices, crumbled chorizo, herbs, and chili flakes. Serve warm.
