Fruit Tartlets
Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- ½ cup (63g) powdered sugar
- ¾ cup (170g) unsalted butter, chilled and diced
- 1 large egg yolk
- 2 tablespoons (30ml) cold water
- 2 cups (300g) assorted fresh fruits (strawberries, blueberries, kiwi, etc.)
- 1 cup (240ml) heavy cream
- ½ cup (60g) granulated sugar
- 1 teaspoon (5ml) vanilla extract
- 1 tablespoon (15ml) cornstarch
- 1 tablespoon (15ml) water (for cornstarch mixture)
- Optional: mint leaves for garnish
Steps:
1. Preheat the oven to 350°F.
2. Mix the flour and powdered sugar well in a bowl.
3. Add the chilled, diced butter to the flour mixture and mix until it resembles coarse crumbs.
4. Combine the egg yolk and cold water into the mixture to form a dough.
5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
6. Flatten the dough on a floured surface until it's about 1/8 inch thick.
7. Cut the dough into circles to fit into your tartlet pans.
8. Carefully place the dough circles into greased tartlet molds.
9. Using a fork, poke holes in the bases and bake until golden, about 15-20 minutes.
10. Whip the heavy cream, sugar, and vanilla until soft peaks appear.
11. In a small pot, mix cornstarch and water; bring to a simmer while stirring until thickened.
12. Remove from heat and let it cool slightly before adding to the cream.
13. Spoon the whipped cream mix into each cooled tartlet shell.
14. Decorate the tartlets by arranging fresh fruit on top.
15. Enjoy the tartlets right away or refrigerate until serving time.
