Ingredients:
For the pancakes:
• 1 1/4 cups plain flour
• 2 tbsp sugar
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1 cup plant milk (oat, almond, or soy)
• 1 tbsp apple cider vinegar
• 1 tsp vanilla extract
• 2 tbsp melted vegan butter or neutral oil
For the vegan chocolate sauce:
• 100g dark chocolate (dairy-free)
• 1/3 cup coconut milk (full-fat)
• 1 tbsp maple syrup
• 1/2 tsp vanilla extract
Method:
1. In a small bowl, mix plant milk and apple cider vinegar. Let sit for 5 minutes to create vegan buttermilk.
2. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
3. Add the vegan buttermilk, vanilla, and melted butter/oil to the dry ingredients. Stir until just combined; don’t overmix.
4. Heat a non-stick pan over medium heat and lightly grease with vegan butter.
5. Pour batter onto the pan (about 1/4 cup per pancake). Cook until bubbles form on the surface, then flip and cook until golden brown.
For the chocolate sauce:
6. Heat the coconut milk in a small saucepan until warm (not boiling).
7. Remove from heat and add chopped dark chocolate, maple syrup, and vanilla. Stir until smooth and glossy.
8. Stack the pancakes high and drizzle generously with the warm chocolate sauce. Enjoy!
