Deliciously herby smashed beans topped with mushroom and roast tomatoes 🤩
Griddled bread drizzled with olive oil topped with herby crushed butter beans, juicy mushrooms and roast tomatoes!
Top with some chilli oil and a sprinkle of fresh herbs - delicious!!

Serves 2
For the tomatoes;
2 tomatoes sliced in half
1 tbsp olive oil
Sea salt
Herby smashed butter beans;
1 can butter beans drained
Juice 1/2 lemon
2 tbsp fresh mint shredded
2 tbsp fresh coriander shredded
2 tbsp tahini
2 tbsp extra virgin olive oil
Big pinch sea salt
For the mushrooms;
2 field mushrooms
1 tbsp olive oil
Sea salt
Charred bread;
2 slices fresh bread
Olive oil
To top;
Chilli oil
Fresh thyme
For the roast tomatoes;
Pre heat your oven to 180c
Add the tomatoes, olive oil and salt to a small baking tray.
For the mushrooms;
Fry the mushrooms in a small pan with the olive oil and salt for 3- 4 minutes until cooked.
For the herby smashed butter beans;
Add all the ingredients to a bowl and mix to combine.
Now smash up with a fork.
For the charred bread;
Heat a griddle pan or frying pan to medium.
Add a splash of oil then transfer the bread to the pan.
Char on each side until a little charred on both sides.
To serve;
Top the toast with the smashed beans, mushrooms and tomatoes.
Drizzle with chilli oil and sprinkle some fresh thyme over the top
