Coconut Toffee Chocolate Chip Cookie Bars
Ingredients:
2 ¼ cups (280 g) all-purpose flour
¾ cup (170 g) unsalted butter, melted
1 cup (175 g) semi-sweet chocolate chips
1 cup (90 g) sweetened shredded coconut
1 cup (160 g) toffee bits
¾ cup (150 g) brown sugar, packed
½ cup (100 g) granulated sugar
2 large eggs
1 tbsp vanilla extract
½ tsp baking soda
½ tsp salt
Instructions:
Preheat oven: to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease.
Mix wet ingredients: In a large bowl, whisk melted butter with brown sugar and granulated sugar until smooth. Add eggs and vanilla; whisk until glossy.
Combine dry ingredients: In a separate bowl, mix flour, baking soda, and salt. Add to the wet mixture and stir until just combined.
Add mix-ins: Fold in chocolate chips, shredded coconut, and toffee bits.
Bake: Spread the batter evenly into the pan. Bake 30–35 minutes until edges are golden and center is set (a toothpick may come out with a few moist crumbs).
Cool & slice: Cool completely in the pan, then lift out using the parchment and cut into bars.
