Asian Cucumber Salad
Ingredients:
2 large cucumbers, thinly sliced
1/4 cup rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey or sugar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
2 green onions, thinly sliced
Sesame seeds and chopped cilantro for garnish (optional)
Directions:
In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey or sugar, grated ginger, minced garlic, and red pepper flakes (if using).
Place thinly sliced cucumbers and green onions in a large mixing bowl.
Pour the dressing over the cucumbers and green onions, tossing gently to coat.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, sprinkle sesame seeds and chopped cilantro over the salad if desired.
Serve chilled as a refreshing side dish or appetizer.
