TOFU STIR FRY 💚
Another day, another tofu stir fry - plenty of protein with the tofu and protein noodles together with lots of colourful veg and some banging flavour 👌💯😍
Deets - serves 3
1 x 450g block firm tofu
1 -2 red onions, sliced
1-2 peppers , diced
1 large courgette, sliced/chopped
Chestnut mushrooms, sliced
Protein noodles
For the stir fry sauce
75ml light soy sauce
1 tspn sesame oil water
1 tbspn @myvegan sugar free maple syrup
2 garlic cloves, crushed
Small piece of ginger, grated
Method
1. Cut the tofu into triangles and stir fry in a large frying pan with a little oil or spray oil until a little coloured and crispy on all sides
2. Add the vegetables and continue to fry for another 5 minutes
3. Add all of the stir fry sauce ingredients to a jug or bowl and whisk until smooth
4. Add the stir fry sauce to the pan and fry for 2-3 minutes
5. Add the protein noodles and continue to fry for a few minutes until heated through
6. Garnish with red chilli, spring onions and sesame seeds,
7. I’ve also served mine with a portion of broccoli for extra green veg 🙌🤩
8. Enjoy and pretend you can use chopsticks 😊
