๐ฒ๐ฆ10 MINUTE MOROCCAN CHICKEN๐ฒ๐ฆ
Whatโs better than a tasty meal on the plate in 10 minutes?
Moroccan Chicken with Lemon & Mint Couscous. 2.5 syns
๐๐๐RECIPE serves 4
4 chicken breasts diced
400g chopped tomatoes
250g couscous
1 lemon
4 large tomatoes diced
60g diced apricots chopped ( 6 syns)
30g sultanas (4)
3-4 large garlic cloves minced
450ml vegetable stock
2 tbsp ras el hanout spices
1 tsp cumin
Handful chopped Fresh mint
Add the chopped chicken to a pan with the cumin and ras el hanout spices and cook for 4-5 minutes m
Add the stock to couscous, cover and leave to one side to steam
Add the garlic, chopped tomatoes, diced apricots, sultanas, diced tomatoes and 200ml boiled water
Bring to the boil and cook for 5-6 min further or until the chicken is cooked through
Stir the chopped mint , lemon juice and zest through the couscous and serve
