All Purpose Flour (Maida) - 125g
Salt - 2 Tsp
Sugar - 1 TsOil - 4 Tbsp
Water - Approx. 250ml (add little by little as needed to make a stiff dough)

Oil - 2 Tbsp
Mustard - 1 Tsp
Fennel - 1 Tsp
Urad dal - 1 Tsp
Gram Dal - 1 Tsp
Cinnamon Stick - Small Piece
Cloves - 3
Onion - 2 Medium Size (Sliced)
Ginger - Julienne Cut
Curry Leaves - A Spring
Green Chillies - 3
Turmeric Powder - 1/4 Tsp
Slat - 1 Tsp
Water - 1 Cup
Boiled Potatoes - 500g
Lemon Juice - Few Drops
Coriander or Culantro

Oil To Fry

Poori is commonly served hot, straight from the fryer. They are usually accompanied by a variety of side dishes such as potato curry (aloo Masala), Chana masala (spiced chickpeas), or a range of vegetable curries.
